2/8/15 Recipe of the Week: Oven-Fried Chicken

1 1/3 cups vegetable oil
1 tsp. salt
1 tsp. garlic salt
8-10 chicken pieces
1 1/3 cups butter
2 tsp. pepper
1 tsp. dried marjoram (optional)
1 cup flour
2 tsp. paprika

Place the oil and butter in a jelly-roll pan and put in a 375 degree oven to melt. Set aside. In a large paper bag, combine the flour and seasonings. Roll the chicken pieces, 3 at a time, in the melted oil-butter mixture, then drop them in the bag and shake to coat. Place the chicken on the baking pan, skin side down. Bake for 45 minutes. With a spatula, turn over and bake 5-10 minutes longer or until the top crust begins to bubble. If desired, the pan drippings make excellent gravy for biscuits or potatoes.
