7/5/15 Recipe of the Week: Amish Cake

2 tsp. Soda
2 Eggs
1 Can (20 oz.) Crushed Pineapple and Juice
2 cups Flour
1 Tbs. Vanilla
2 cups Sugar
1 cup Chopped Nuts

Grease bottom of 9 x 13 inch pan, lightly. Mix all ingredients together and pour into pan. Bake at 350 for 45 minutes.

4 oz. Cream Cheese
2 cups Confectioner Sugar
2/3 Stick of Margarine

Beat until fluffy, spread over cool cake.

7/12/15 Recipe of the Week: Grandma’s Chile Sauce

12 Tomatoes
2 Green Peppers
1 tsp. Cinnamon
½ tsp. Black Pepper
2 Onions
½ tsp. Clove
2 cups Vinegar
Salt to taste

Scald tomatoes and skin. Squeeze tomatoes and pour off water. Mix remaining ingredients and simmer until quite thick. More seasoning and sugar can be added to desired taste. If you have a large roaster to place sauce in to bake, you won’t have to be so careful about it scorching. Bake at 300 to 325 degrees until done.

7/19/15 Recipe of the Week: Canned Apples

10 cups Water
1 tsp. Nutmeg
1 Tbs. Vanilla
1 cup Cornstarch
1 tsp. Cinnamon
Approximately 5 Quarts Apples, Sliced
4 ½ cups Sugar
1 Tbs. Lemon Juice

Mix cornstarch and sugar with a little bit or the water to form a smooth paste; gradually add remaining water, nutmeg, and cinnamon. Cook until thick. Remove from heat and add lemon juice and vanilla. Cook a little longer and let set. Stir in peeled, sliced apples and mix well. Pack in 7 clean quart jars; seal and cold pack for 15 minutes, after water starts to boil.

7/26/15 Recipe of the Week: Red Tomato Chili Sauce

12 Ripe Tomatoes, Peeled
2 Peppers
2 cups Sugar
2 cups Vinegar
2 Onions
½ tsp. Cloves
1 tsp. Cinnamon

Add salt and pepper to suit your taste. Cook until thick. Can while hot.
